I have sore muscles today. Not because I joined a gym, but because I went grocery shopping! Holy cow, I'm out of shape. The shopping cart (or buggy, as we say in the South) had a mind of its own. It pulled to the left, and occasionally would make an abrupt left turn. I fought that sucker through the whole of Walmart. The fuller it got, the harder it got to push and steer. At some points, I had to throw my whole weight against it to get it to go where I wanted.
I've been trying to simplify food preparation, so I picked up some frozen burger patties. Last night I made a (bunless) mushroom Swiss burger, and it came out really good! That, with a small avocado, was my one meal for the day, and very satisfying.
The last couple of days I've been wavering about this journey. Diet fatigue is part of it, but the main thing is I'm not really happy with how I look. Even though I know I've dropped almost 7 inches in all the major measurements, I don't really feel like I look very different in the mirror. The major exception being baggy, saggy skin everywhere! Belly flap, upper arm wings, even on my forearms. I'd almost prefer to see plumply filled out flesh to the wrinkly sags. *sigh*
I know...that skin was stretched out for a LOT of years, and at my age, the chances of it firming up are slim. But I remind myself of the health benefits of this WOE, above and beyond the weight loss, so I soldier on.
I've been invited to my neighbors' for Thanksgiving, and will be making cornbread dressing and deviled eggs. I spent some time yesterday looking up Southern recipes for the dressing, and there are some really odd variations! My family traditions are from the Mid-west, so the recipes I grew up with are way different that what I found. They add, for the most part, cream of chicken and cream of celery soups to the mix, as well as eggs. I'm going to give it a try, since I'm the only 'Yankee' that will be there, and I want the rest of the folks to find it familiar.
And since the dressing recipes were so different, I thought I'd better look up 'Southern' deviled eggs. Thankfully, there's not a lot of variation there. But I did find a great tip to make sure the hole of the yolk is centered. The day before you cook the eggs, turn them upside down in the carton. If they have been sitting in the carton for a while in one direction, the yolk will have settled at the bottom. Turning them will make it migrate to the middle. It will be interesting to see how that works.

So, the cured salmon (lox) I made came out WAY different from previous batches. There were a couple of differences this time. First, it was wild-caught sockeye salmon. Very delicate flesh, such that handling it raw made it fall apart. Second, I let it cure an extra day because I got busy and forgot about it.
I did it in 2 separate batches...the head end and the tail end. The thinner tail end came out almost like salmon jerky! It was hard all the way through, with a sweet/savory flavor. The head end lost about 1/3 its depth, but was still tender and oily in the middle. Both had a wonderful flavor, though, so tomorrow when the ex comes to adjust my headlights (no, that's not a veiled, scandalous reference!) I will be very happy to present him with both batches.
Tonight I was in the mood for some comfort food, so I made a mini 'pot roast'. I found a tiny electric skillet last year, and planned to use it in my mini-food videos. It has turned out to be one of the most useful pieces of kitchen kit to date! I had a half of a rib eye steak, so I browned it, then added diced carrots and potatoes, some water, and let it cook on medium for 30 minutes. It came out beautifully, and the juices made a rich gravy. Just the ticket for what I wanted tonight, and I ate every scrap. Still, for all the fullness I feel, and satisfaction, I only managed to rack up 612 calories for the day. That thin, knife edge of keto lack of hunger is bedeviling!
I may need to make some fat bombs to get the calorie count up again.
Still figuring out maintenance...

I spent the better part of an hour concocting what sounded like an awesome soup, Chinese style. When it was done, I tasted it, and it was pretty much, "Meh". I couldn't eat it, didn't want it, and ended up throwing it away. One of the downsides of ketosis *for me* is that the mere act of cooking seems to satiate my appetite.
They say that you eat with your eyes first. It seems like I eat with my eyes *only*.
So, now it feels like I have to continue my journey eating out, or I'll just stop eating. The big problem with that is that I live in "Da Souf", and everything is Southern Fried something-or-other. Still working out the balance here.
On another note, I had found some great peeled garlic in a bag in the refrigerated section of one of the stores I frequent. It's a great go-to for meal prep, especially with my Pampered Chef garlic slicer. But I forgot where I got it last time, and haven't been able to find it for over a month. So this week, I visited our new (giant!) Sam's Club, and I found the garlic again. Woohoo! Unfortunately, it came in only a 3 lb bag. That's a s##tload of fresh garlic, my friends! And even in the refrigerator, it's not going to last very long. I researched, and found that it can be frozen, so I spent the afternoon portioning it into snack bags of 6-10 cloves, then vacuum sealing multiple bags for the freezer. It will be interesting to see how they fare.
The main reason I went to Sam's was to get a side of fresh salmon. The ex (who recently replaced my headlights at his own expense) really loves my way of making cured salmon (Lox). So to repay him for his act of kindness, I decided to make him a big batch. It has one more day in the fridge, then it will be ready to slice and give to him.
It's hard to believe that the year is speeding to a close. The holidays are upon us, pumpkin spice every-f##king-thing is everywhere, and I just now got used to writing 2017 on my documents! Is it just me???

I'm a little befuddled, friends. I met up with the ex a week ago for lunch and backgammon. Always a great time. As we were leaving, he walked me to my car, and noticed that the headlights were oxidized quite badly. He asked me if I was planning on keeping the car for a while, and I said I am. So, a couple of days ago, he texts me, and says he has new headlights, and when is a good time for me to bring the car to him so he can install them.
I took the car to his place this morning, and he didn't just get the lenses, he got the whole headlight assembly! And he wouldn't let me pay for them. Those don't come cheap. I checked online, and the average price I found was $183...EACH!
I've mentioned before that he's just a really nice guy, but I'm sort of gobsmacked that he would do that for me.
In other news...I've mentioned before that I follow a few travel vloggers. A food they frequently mention is a fish called barramundi. To my surprise, my local grocery store had some, so I got a good sized fillet to try. It is really, really good! I stir-fried some Swiss chard, bean sprouts and shiitake mushrooms with a little fish sauce, lemon juice, and some prepared sambal, then steamed the fish over top of the veggies. It was a fantastic dinner!
Today feels like a 'get-stuff-done' day, so I may tackle installing my new kitchen faucet. I ordered it from Wish (dot) com. I'd been looking at faucets, but the kind I wanted averaged around $270 locally. I found it on Wish for $44! It took almost a month to get here, but worth it. It looks like a restaurant-style faucet, with a high arch and pull-down sprayer.

Man, am I tired! I've had 2 very busy days at work, with more than a few 'surprises' thrown at me by clients. I gotta say, again, "People wear me the F**k out!" For the folks that don't know me, I'm what's known as a social introvert. I like people, but in small doses, and with a great deal of recovery time (alone!) in between. These last 2 days, between the dramas of my co-workers, and my clients, I'm ready to curl up in my bed for the next 24 hours with the blankets over my head.
After a week of warmer-than-usual temperatures, a cold front is moving through tonight. When I got out of work (last one to leave today), it was gloomy and eerily quiet. There was very little traffic on the roads, and just a hushed feeling to the whole area.
A while back, I ordered some mixes from a company called, "Low Carb Food Company". They make a wide variety of low carb products. I reviewed the tempura batter mix before, but it's been quite a while. Last night I was craving shrimp tempura, so I hauled out the mix. It really is quite good! It's not the light, airy, crispy tempura you'll find at restaurants, but at only .5 net carbs per serving, it satisfies the craving very nicely. Granted, dipping sweet potato and onion slices in it kind of blows the macros, but they were what I had on hand, and made a satisfying complement to the shrimp. And, apparently, didn't make me blow up.
So, while my weight is wavering up and down, I'm seeing other signs on my body that tell me I'm still losing fat. Sadly, it's mostly new hang-y skin in new places. :/ When I hold up my forearms, there is a new flap of wrinkly skin that hangs down. My upper abdomen has new lines of sag. And the ring that I've worn for over 20 years now spins around my finger on its own, and is getting uncomfortable to wear. So...um...yay? LOL!
I have to keep reminding myself that I'm doing this for health, NOT for appearance. Today, I wore some new silk pants in size S/M. I can't even remember the last time I was able to fit into something like that! I bought them at Goodwill for 3.99, and didn't notice until I put them on this morning that the front has a fly with one button in the center. I think they're actually men's pajama pants! ROFL! The waist is elastic with a drawstring, but then there's this single button fly... Meh, I wore them to work anyway, because they're elegant silk, and so comfortable, it's like wearing nothing at all. XD
Enough rambling for tonight. I'm toddling off to bed and covers over my head.
