Dinner Tonight: Pork Chop with Apple Curry Sauce and Louisiana Red Beans & Rice w/o Sausage. Gave myself a double helping of the red beans & rice. 1398cal.

Dinner tonight: Tuna Rotini with Tomato-Basil Vinaigrette & Marinated Green Beans with Olives, Tomatoes, and Feta. That's a lot to say, but luckily, not a ton of calories...even with a double serving of the Tuna Rotini, only 1257cal.

Dinner tonight: Sheet Pan Chicken Mango Fajitas & Black Beans & Rice. The sweet mango makes a nice counterpoint to the fajita spices. And of course who doesn't like black beans & rice! 964cal.
