Dinner tonight: Apricot-Lemon Chicken & Sunflower Chopped Salad. I kind of doubled what we were supposed to eat, even then only 1060cal.

This has been a favorite of our family's for years. Everyday Cassoulet. This recipe from an old Betty Crocker cookbook. I looked online at Betty Crocker's website, they've changed this recipe significantly for the worse, by adding more types of pork meat and cutting the types of beans. I think this is much healthier as it only uses one kind of sausage, and loads up three different beans. 1110cal.
Next time I may try a veggie sausage.

The other evening I walked through the kitchen as my wife was making dinner. "Don't touch the spices, they're socially distancing." Okaaaaayyy......

Dinner tonight: Mediterranean Sheet Pan Dinner. This is one of my all time favorites! Double helping at 1066cal.
