BIBIMBAP - Vegetarian
This is today's lunch
A Korean recipe. I made my own vegetarian version. This easy to make and delicious dish has bean sprouts as one of the ingredients, but since I did not have any at hand, I decided to substitute with shredded lettuce instead.
I already had sweet short brown rice cooked in my rice cooker.
Egg/s
Mushrooms. I used baby Bella mushrooms. Again, that is what I had in at hand. Only 2 oz. used.
Shredded carrots
Baby spinach
Cucumber (half of one)
Sesame oil
garlic powder
sesame seeds
a bit of roasted dried seaweed
salt
Gochujang paste (hot pepper paste). This is supposed to have a sauce made with the paste, but I was hungry and in a hurry. The paste by itself is super delish.
Once all was ready to eat, I only added one egg, leaving one for tonight's dinner. My bowl of Bibimbap is small compared to the traditional big bowl in which is served. But this is a matter of taste.
Calories for the 1 bowl of Bibimbap = 200 calories.

Tonight's dinner:
Morning Star Farms: Veggie meal starters grillers crumbles- This will serve 2 people and is about 60 cal per serving (1/2 cup)
Taco seasoning (vegan/vegetarian-friendly)
Chipotle sauce
Vegetarian stock
For the toppings:
Tomato
Green onions
red onion
Spinach
Garbanzo beans
Quezadilla shredded cheese
Homemade tortillas with yellow corn- about 40 cal per tortilla
Each taco with all the fillings would be around 140 calories each serving (a serving being 1 tortilla/taco)
For me a grand total of 420 calories as I will have 3 tacos.

Vanilla Soy Milk..............1 cup
Fresh blueberries.............1/4 cup
Banana........................1
Coconut sugar.................A sprinkling on top.
Cinnamon (powdered)...........1 Tsp
Calories:
100 cal. for the vanilla soy milk
42 cal for the blueberries
60 cal. for the small banana
150 oatmeal
5 cal. coconut sugar
5 cal. cinnamon
Total= 362 calories
