I love the flax Muffins in a Minute. Absolutely love them. Especially now that I seem to be able to eat 2-3 a week with no noticeable stalling. They are an especially effective, high-fiber cream cheese delivery system and assist you in getting your RDI of cream cheese.*
I am now plotting ways to turn them into gingerbread-flavored muffins or (when I hit phase 2) blueberry and raspberry muffins. If they were a little less sweet, and allowed to cool, I could see them as the occasional "sandwich" for some eggs and ham or maybe chicken salad.
Of course, if my weight starts to stall, these will probably be the first thing to go. Unfortunately, it seems to be excess intake of calories (Atkins carb theory be damned, in my case) that slows me down. If I stay under 25g-30g of carbs and 1800 calories, things seem to be fine. I'm getting impatient for OWL (just a month and a half left on Induction) because I want to see what my ACL is.
*I know there's no RDI for cream cheese, but there totally should be, right?

I just saw a weight today that I did not anticipate seeing for a while: my next goal of 282 and/or 20% of total body weight lost. Like last time, I'm not going to "call it" until I'm 5 LBs under it (due to normal fluctuations), but... exciting!

After working until 1:30 AM the previous night, and then 12 hours straight through in the office, I tried to make a journal entry to FatSecret. I fell asleep in the middle of the first sentence. Maybe it was the most time I'd spent sitting still all day. I was half afraid it would be here now, just a weird statement that trailed off in the middle with the letters randomly thrown around. Then I came home after 12 hours and worked 3 additional hours. I'm not sure I'm anymore sane at this point, but at least now I'm awake. :P

There was extra parmesan pasta left over after my son's lunch. Not enough to put away, but a couple of big spoonfuls. I had already weighed in, so I thought: Well, I can totally burn this off. Instead, I threw it in the garbage. Those were the kind of calories I never counted before. "Oh, I'll just have a few bites..." Who knows HOW much I was eating.
For me, it seems the best plan is calorie counting on Atkins. The Atkins part controls my cravings. I know Atkins says you shouldn't need to count the calories, but I find myself gaining when I jump into the 2000+ area, regardless of carb counts.

This morning I decided to try on my size 24 pants. I try this about once a month, and prior to this month, they did NOT fit, not even over my hips.
This morning, they came the closest to fitting that they have in almost two years! I could pull them all the way up, snap them and zip them. I've been wearing size 28 for so long that I almost cried.
However, they do not fit comfortably. Not yet. They give me a quite a horrible muffin top at the moment and would probably not be pleasant for sitting down for long periods of time (as I have to at my IT job). But it's so close. I know that next month, if I keep this up, they will fit.
Since they did almost fit, I tried on my size 26 pants that have been put away in my drawer. They fit, but unfortunately, I bought them during the phase where I was wearing 5" heels (what was I thinking??), so they were too long for my only-casual shoes now. But they fit. My size 28s have been so unflatteringly big on me, I can't afford different size 26 pants... but I think it will be worth it if I can get back into the 24s.
