I am a 34 year old wife and mother of a 6 year old. I work 40 hours a week as an office manager. It is very hard to come home and cook after working all day. My day begins at 5:45am, we leave the house at 6:45am, I drop off my daughter at school and husband at work then I go to work, at 5:30pm I leave work pick up my daughter and husband and go back home. By the time we get home it is after 6:00p and sometimes even 7:00pm. Cooking is the last thing on my mind. Now with this diet we pick up fresh meat or chicken on the way home from a local meat market and my husband grills rain or shine. Meanwhile I double check my daughters homework, make side dishes, salad mostly for us and vegetable and rice or pasta for my daughter. Sometimes she will eat salad too, especially if it has cucumbers. I found this website when I was looking for recipes. I have decided that if I can prepare three ingredients for at least three meals for during the week, then we can just come home and bake or warm up or cook in less than thirty minutes. Hopefully this will make it easier to stick to it. I don’t like being a size 18 and my knees don’t like it either, especially when I have to climb the stairs at work every day.

I buy low carb 100% whole wheat pitas. The contain flaxseed. They are 4 carbs for 1 whole pita so I cut it in 2 and then fill it with ham and cheese. Sometimes I eat them cold and sometimes I heat them up in a pan like a grilled cheese sandwich and they are great on the go. For my husband, I boil eggs and peel them and either put them in ziploc bags or tupperware to keep them fresh so if he is in a hurry he grabs two and eats them in the car. We got an omelet maker (kinda like the sandwich maker ) for Christmas and that is great as well because you can chop your ingredients the night before and then pour it and cook stick it in a pita and go or cup it in a cup or bowl and eat it with a spoon. Zucchini taste great in an omelet. Precook it the night before with garlic and olive oil.
