I've been struggling with maintaining my diet plan with the changes at work. With the hurricane Harvey causing so much chaos for the USPS, I have found myself without a Postmaster in my office. This has left me to do the job of two people on my own, and is forcing me to come in before opening and staying well after closing just to get enough done to keep everything from falling apart.

I had a week period in which I fell off track for various reasons, and it looks like it will take three weeks to get back to where I was. That is a little frustrating, but it is my own fault for taking ten steps back by eating the high carbohydrate foods in such quantities.

I've been walking around 10k-20k steps a day with today and tomorrow being the exception, I need the free time to recuperate to be ready for the hellish work week. That was something that I at least stayed track on very well, even when I ate poorly.

I need to take advantage of my off time to allow me to prepare my meals in advance and get the basic needs taken care of so I won't have to be stressed about it throughout the week.

Just need to keep on keeping on.

I just realized that I am now down 90 pounds from the beginning of my weight loss journey. I still have 60 pounds to go to meet my long term goal, but my short term goal is only 10 pounds away. My weight loss has slowed down a bit but I won't let that deter me.

I need to keep at it. It is hard because I have been having cravings for foods I normally have whenever I want. I try to make foods that taste good and are satisfying, but I often don't meet that need. To try to help counter that problem, I have been intermittent fasting and eating all of my calories in about an 8 hour period. Sometimes I am perfectly fine with a 200 calorie snack and really don't feel the need to eat, but sometimes I find that I am ravenous and could easily eat an entire pizza should it be available to me.

So we shall see if I reach my goal by September 3rd. That's 2 pounds a week. I'll make sure to add some walking back in to keep the pace going.

As I have been looking at recipes with coconut oil to make fat bombs, I decided to try a little taste of what that coconut oil tastes like. It tastes like coconut and seems mildly sweet, which makes sense as to why it is used in so many recipes for "Keto" friendly sweets.

I decided to try to make a favorite of mine, Almond Joys, as I had some ingredients I believed could go together to make something similar.

Ingredients:

Lindt Excellence Supreme Dark Chocolate Bar 90% Cocoa, 3.5 OZ
Nutiva Virgin Organic Coconut Oil, 4 TBSP
Now Foods Erythritol, 1/4 Cup (48 grams)
Blue Diamond Almonds, 2 oz (56 grams)

I melted the chocolate down and mixed in the Erythritol. Then I added and mixed in the coconut oil. Finally I mixed in the almonds and poured it out into a container I just happened to have lying around. I put it in the freezer for maybe 30 minutes and it was sufficiently solid to break up and eat. It was quite tasty, but the calories are extremely dense as it is nearly 90% fat. I inadvertently ate 3 servings, which is ok as I simply took other snacks out, as it was quite tasty.

The only issue I had was that the Erythritol was a bit grainy in the chocolate. I didn't particularly mind, but I'll try to mix the Erythritol in a bit more to reduce the texture of it. I've read that this is a common issue with Erythritol, and that you can get a powdered version to help reduce that issue. If all else, they suggest melting it down in coconut oil which is a reasonable option in this case.
