Happy weigh in Monday

Grateful that the number is still heading in the downward direction. Keep on keeping on.

So, I tried a Thai Red Curry chicken recipe yesterday. Had a serving and flushed the rest. Come hell or high water, I will find a way to use up the last 4.5 lbs of chicken breast tenders, I'll either grind them up and make burgers or use the slow cooker for a stew like muck. Why they call them tender eludes me. Cooked in a mass of vegetables and the Thais curry sauce, they were still dry as dust. Maybe it was the cast iron pot, or too high heat? Think I've developed a strong dislike of chicken breast. Going forward (when this lot is done) I likely will be a leg or thigh girl.

As I was weeding yesterday, I hit a colony of little itty bitty fast moving ants. Those suckers bite. My right hand and forearm have a bunch of welts. A few more on my legs where they travlled from my shoes up the socks and pant legs. Itchy itchy itchy. Trying not to scratchy scratchy scratchy.

I am tired of chicken. The chicken breast are too large here.

Maybe that's it Morticia. All this genetic modification and factory farming has resulted in tasteless oversized chicken breasts. It's ok I suppose if you can bread them, fry them, cheese them whatever, but a calorie restricted diet doesn't allow for it.

You can cut them into two pieces horizontally and get two chicken cutlets from each breast, then prepare as you normally would. It’s still not going to be as nice as a back-yard-grown chicken (who can find those anymore though?) but it might be an improvement.

I figured since I’m eating less (buying less) and making healthier food choices, I’m purchasing natural raised, cage free chicken…they are a bit more, but smaller in size, they even smell better coming out of the packaging. Sooo much better! they will even occasionally put it on sale
