Lost one more pound! Been doing pretty well at work! We had BBQ for lunch on Monday and i LOVE BBQ..but i was a good girl and stuck with the salad and a couple of pieces of the leanest brisket i could pick out of the pan. I still felt very satisfied and wasn't hungry until dinner. I have been obsessed with hard boiled eggs lately and i dont know why lol...but i've been encorporating them into my new diet and i'm loving it. one of my favorite things to make with them is of course, egg salad. But it just contains so many calories from the mayo that i often feel guilty after eating it. So tonight i made my version of a "vegan egg salad"! I used firm tofu diced into pieces, Nayonaise ( which is vegan eggless mayonaise made from soybeans), dijon mustard and spices. I stuffed it inside a whole wheat pita, added lettuce, tomato, cucumber and onions and it was absolutely amazing! They nayonaise tasted more like miracle whip than mayo, which made this salad a little sweeter than i'm used to but it was very yummy! I also didnt feel guilty eating it as the nayonaise only has 35 calories per tablespoon! I look forward to experimenting with my favorite foods and making them fit into my new diet. Does anyone have any other healthy alternatives to your favorite meals that you want to share? I'd love to read about them!
