soooo birds eye makes a buffalo cauliflower and I ate the whole bag (5 net carbs). very filling and I had a coupon. Got me thinking..i have the urge to have a all veggie day.. like a vegetarian day..Any one ever try this ? Would it help or hurt? I mean whats the harm right? Would eggs and cheese still make it a vegetarian day? Just trying to spice it up and its warming up here (73 today) so produce prices should be going down.. Send me your input, thoughts and opinions, and recipe ideas if you have any ?

I know vegetarians that eat everything but meat.. Cookies , cakes ,candy . I always thought of Vegetarians as healthy until I met a few . DIL is Vegetarian and raising My GD that way as well,, I worry about them at time,, she doesn't do all the carb crap thankfully ,, But I just feel missing out on meat can be detrimental .. meat is complete food with tons of nutrients .

Sweet Georgia, I have no idea... I guess earthworms and bacteria/microscopic stuff... lol. Anyway, vegans don't eat ANY animal products. Vegetarians it varies by the person. Some say no meat but will eat fish, chicken, pork, just not beef. Some say no red meat but eat chicken and fish...some say no meat but eat cheese, eggs, other dairy... Basically, I think vegetarians try to make themselves feel better by not leaving out the meat but not being a total carnivore...most of them EVENTUALLY turn vegan or go back to "normal" eating. As for me, I eat all flesh. I have to be open to it because I'm not going to be a hypocrite so if it's flesh, I have to be open to it, even human. Otherwise I can't justify why a cow is OK but not a dog or a rat..whatever... you know?

Think what soonsoonsoon is saying that vegetarians will eat things that come from animals with eyes, but not the actual animals.

@Redgirl - regarding roasted brussel sprouts. I've never done them on the grill but now that you've put the thought in my head I will do it soon. But I've roasted them in the oven and also do them frequently in an iron skillet. For either, cut fresh ones into halves lengthwise. If doing in the oven coat with olive oil and melted butter, sprinkle garlic powder, salt, pepper, and any other spices you want. Roast at 375 till done (don't actually remember if that's the exact temp I've used or the time). Serve with crumbled bacon. For the iron skillet - heat olive oil and butter in skillet, add a couple cloves minced fresh garlic, cook till it just starts to brown, remove garlic leaving the oil behind. Add brussel sprouts to pan, toss to coat, reduce heat to low and cook cut sides down, covered, till tender. Season with salt/pepper, serve with the crisped garlic and crumbled bacon on them. One other note about the stuffed portabellas - you said vegetarian so I didn't mention meat but I do mine with either ground beef, ground poulty, or a mixture of both in the stuffing...in addition to the veggies mentioned.

The definitions are complicated and arbitrary and I wouldn't get too hung up on them. Every vegetarian or vegan has their own definition. Some vegan foods (by my definition anyway, sigh) with a small proportion of energy from carbohydrates are: tofu, nuts and seeds, nut butters (peanut, almond), avocado/guacamole. spinach, mushrooms, lettuce. You can slice a portobello mushroom, put it in a pan with chopped onion, no oil, cover, cook on medium until the onion is soft. I put that in a sandwich with avocado, I don't personally know the substitution to avoid the bread there but hopefully this idea is useful. Or add avocado and tofu and call it a tofu scramble, but I think I probably lost you as soon as I said "tofu". Sliced mushrooms, chopped onions, bell pepper, no oil, cover, cook on medium until it's soft, add tomatoes, heat through, season with garlic powder, basil, oregano, and serve over shirataki noodles (e.g. Pasta Zero). Thicken it up with tomato puree if you like. I don't know low-carb at all, are bell peppers even okay? At least I tried, right?

For those who like veggies on the grill - we have a very cool grill pan. It's the same shape as a skillet but has perforations a bit smaller than the size of a dime. It's great for smaller veggies like brussel sprouts, baby carrots and cauliflower pieces. You get that lovely grill flavor that comes thru the perforations without having to chase little veggies all over the grill! Since we're approaching "grilling season" you'll probably see them in stores near the BBQ stuff.

My step daughter is a vegetarian and sometimes vegan. Tofu isn't my thing but when she makes it she spices it up w/ hot sauce and it's pretty good.

Just in case it looks like I'm advocating that nobody ever add oil to vegetables, sorry if I gave that impression. If you're cooking mushrooms with other vegetables, you can put them straight into a covered pan and they sort of steam in the water that comes out of the mushrooms. I think it's pretty cool to be able to skip the oil because oil is calorie-dense and I only found out about this quite recently. Both of the recipes I mentioned in my other post work equally well with oil.

the shitaki noodles are made from tofu and are also very low carb and low calorie. I like the real spaghetti. the thin spaghetti is so thin it runs thru the colander and most goes down the drain.

Good grief. Lots of replies regarding the definition of "vegetarian." You are not Vegetarian if you eat fish; you are a Pescatarian. Eat fowl: Pollo-vegetarian. Point being, vegetarians are not interested in killing an animal for food, and the general population struggles with what is classified as an "animal," so I cleared it up with the eyeball definition. Otherwise, fall back on the "animal-vegetable-mineral" classes if one is in doubt.

all great responses.. Im just gonna have a meat-less Monday and that's what Im calling it LOL .. oh and i got my portabellas and made a great breakfast stack with kale, egg and red pepper stacked on my shroom between some mozzarella.. amazing

I finally found the buffalo cauliflower and the bag figured to 5 net carbs per serving and there was 3 servings in bag. This wasn't a very big bag and so am wondering how big was your bag? do they make individual serving size bags?

I had a quart of collard greens and a half can of mixed nuts for dinner the other night. By the time I was ready to eat the next day I was feeling ravenously hungry. I'm pretty sure it was because I didn't have any fat or protein for dinner the night before. I really didn't like that old hungry feeling so I'll probably be sure and eat some kind of flesh to go with my "meat-less" days. :D

You have done amazing!!! Great for you. I love seeing 156 from 250 (means there is hope for me). Funny (strange) that I came across this today, I was ready to throw away my cantaloupe because I am getting paranoid because of all the LC talk. I realize my mom eats an apple, a mandarin (or pear), and a banana (sometimes 2) daily and she has always weighed about 130-136. She eats papayas, pineapple a few times a week (when she gets fresh) the thing with her is, she has never eaten food out in restaurants, doesn't like bread, she doesn't eat processed foods, makes rice a few times a week but only eats fish and turkey breast, and has always eaten avocados with tomatoes and onions, and veggies (any kind). I think we need to relax a bit, a fruit here and there has never triggered a "sugar binge" for me. Not like I want to eat 10 apples :)
