is this wrong? After frying up a pound of bacon bits for salad toppers, etc. I thought it was wrong to let a skillet full of blazing bacon grease go to waste. What to do? I tossed a couple eggs in and basically deep fried them! There are worse snacks!

You can strain the oil and make a really amazing homemade bacon flavored mayo too.

Welcome to my world. I grew up in a house where we saved the bacon grease in a jar in the fridge to use for cooking other things, including eggs. Best grease ever!

@dave58 If you have a stick blender you can blend up the bacon grease with a splash of vinegar, mustard, an egg, salt, and some lime juice. Mayo is really simple to make. Since it uses a raw egg it doesn't keep more than 3 or 4 days but when I have made it it doesn't stick around that long anyway. It's so good. I've also made it with roasted onion and chicken drippings. Just find a basic recipe for mayo and substitute the oil for the bacon grease. Nothing beats it on a hamburger. Yum!

Saturated fat is what I would worry about but I used bacon grease the other day rather than coconut or olive oil as fat for the Kale I was cooking up! Gave it a kind of smoky flavor!

I did the same thing for dinner but also sauteed some spinach in the bacon grease.

Thanks 00Marx00! I think I'd need to cook 5lbs of bacon to get enough grease to make it worthwhile. I'd make sure to do applewood smoked bacon too. Been avoiding regular onions but roasted onion sounds fantastic! @mokupuni - just looked at your bio and now I wish I would have made a low carb Loco Moco! We use riced cauliflower to make fried rice, not the real thing but plenty ono! We skip the gravy though. @Joelmel - spinach and bacon go so well together. Now I want a spinach, bacon and cheese omelette!

Hi Pam— I think most of us ate bacon a lot as kids and it was used in biscuit and everything else. Kept in a coffee can. I still eat bacon once in a while and add it for flavoring to some dishes. I bake it in the oven on a rack so the grease drains away from what I am actual going to eat. Makes it soo good. Always crispy. I use Hormel Black Label lower sodium bacon. It is excellent.

@dave58 It doesn't need to be all bacon grease you can make up the difference with olive oil. It's the bacon flavor you are aiming for.

We use to call this dirty eggs, like a dirty martini. I also grew up living off bacon grease, I still cook with it.
