So, the cured salmon (lox) I made came out WAY different from previous batches. There were a couple of differences this time. First, it was wild-caught sockeye salmon. Very delicate flesh, such that handling it raw made it fall apart. Second, I let it cure an extra day because I got busy and forgot about it.
I did it in 2 separate batches...the head end and the tail end. The thinner tail end came out almost like salmon jerky! It was hard all the way through, with a sweet/savory flavor. The head end lost about 1/3 its depth, but was still tender and oily in the middle. Both had a wonderful flavor, though, so tomorrow when the ex comes to adjust my headlights (no, that's not a veiled, scandalous reference!) I will be very happy to present him with both batches.
Tonight I was in the mood for some comfort food, so I made a mini 'pot roast'. I found a tiny electric skillet last year, and planned to use it in my mini-food videos. It has turned out to be one of the most useful pieces of kitchen kit to date! I had a half of a rib eye steak, so I browned it, then added diced carrots and potatoes, some water, and let it cook on medium for 30 minutes. It came out beautifully, and the juices made a rich gravy. Just the ticket for what I wanted tonight, and I ate every scrap. Still, for all the fullness I feel, and satisfaction, I only managed to rack up 612 calories for the day. That thin, knife edge of keto lack of hunger is bedeviling!
I may need to make some fat bombs to get the calorie count up again.
