Hello!

I've been trying to cook healthier - low fat versions of my favorite foods and watch what I eat. Had a PB & J sandwich with iced coffee for breakfast today. I didn't wake up in time to have a better breakfast.

Turkey sandwich w/cucumber & spinach for lunch.

My biggest problem is when I cook, I cook for two. I'm okay with having salads 7 days a week for dinner, but I know my boyfriend will get sick of it after two days. HELP! I'm trying to get him to eat healthy as well (He doesn't exercise, eats like a college student -cookies, lots of carbs, sodas, skip meals...etc). Any suggestions?

I am going through the same issue with my boyfriend. He wants pizza 4 days a week and spaghetti the other 3... and at least twice the serving size of each. He fully supports me trying to lose weight (as long as I'm not cranky) so I finally told him that I am only cooking dinner for him 3 nights a week. It makes the meals that I cook for us special and still lets him eat what he wants. He knows that the servings sizes I give him are correct and that the choices are better, so I am just hoping that they will catch on soon enough! It has helped me to find/create recipes for his favorite dishes that will work better for your diet. So far I have only mastered turkey meatloaf and baked chicken parmesan, but they always wow him! If that isn't going to work, then grill up some chicken for your salad and boil him some pasta so that you two can utilize the same ingredients. Similarly, you can make a lean protein to share and then bake a potato for him and a sweet potato for yourself! I hope this helped :)

I have the same issues with my fiance, he needs more fuel because he gets out daily to strap down loads (he drives a 18wheeler)and it is a challenge to eat healthy only having a very small fridge and only a microwave. We eat all meals together so he will eat the same as me usually in the AM but lunch he will have bread as where I don't ( I save mass carbs for dinner)And during week we have pre-cooked from home meals or frozen entrees. Never the same dinner or portions though since he can obviously eat more than me hes a guy and much taller than I am. The grill is your best friend though at this point. From chicken to seafood it is always good grilled and vegetables most ppl don't or never liked turn into a whole new world once brushed with some light olive oil and a bit of seasoning of your choice. Brush a baked potato skin and all,poke holes and add sea salt bake in oven while you prepare grill and you will have a delicious potato for him by the time other stuff is ready.There are many ways to get him involved but the most important is to let him see all the yummy stuff you are eating and he will want in on it as well. Lots of recipes about this site too as well as other sites.
