Made pickled onions to support the probiotics I'm taking after an unfortunate but necessary course of antibiotics. They taste sooo good on everything but gotta watch the carbs.

They are so good. I didn't use sugar- a few drops of stevia extract and a drop of sucralose.Shockingly easy to make. Dissolve 1.5 teaspoons of salt (Tablespoon of sugar too if you are not worried about carbs). Then mix in half a cup of apple cider vinegar. I added stevia and a tiny but of sucralose instead of sugar. Thinly slice an average sized red onion and put it into a jar. Pour the liquid over. Leave out for an hour then refrigerate.. That's it. They keep for 2 weeks. 😊
