Last night I made cauliflower rice for the first time. I was making a dish of shrimp in a tomato-feta cheese sauce that I usually serve over pasta. I had intended to make zucchini noodles this time, but cooked up the zucchini the previous night. (The family is not a big fan of veggie noodles anyway.) The cauliflower rice was a big hit! It was especially good with the sauce. Husband and both kids ate it without complaining! That's a winner in my book. :)

For the most part, I feel like I am back in control. As long as I keep to a plan and don't let my kids plant the "order pizza" idea in my head, I should be fine.

I wrote a nice long entry to other day about getting back out onto the hiking trail with my pup, but it disappeared and I didn't have the energy to rewrite it. I will just say that Snakebite is doing very well, back to his old self, and we both overcame our anxieties and have enjoyed two hikes in the past week.
