Happy Monday night, FS buddies! Weight is holding steady, and food experimenting continues.
Apparently, variety of rice is important to my body. In the past, when I've experimented with adding rice into my diet, I'd used either brown rice, or a Mexican blanched variety. The brown rice took me right out of ketosis, and caused a jump in water weight of 3-5 pounds. The Mexican variety was fine, as long as I paired it with beans. No weight, and still in ketosis, in spite of the added carbs from the beans. On its own, however, it had the same effect as brown rice.
So I decided to check on my favorite rice, jasmine. As long as I keep the serving size to 3/4 cup, and stay under 50 g carbs for the day (challenging, as the rice takes up 34 g on its own) I still stay in ketosis, and don't gain. Going over on serving size, and/or going over 50 g carbs results in a slight bump up, and going out of ketosis. Good info, as I LOVE rice!
We're having a few days of afternoon showers/thunderstorms. Thunder relaxes me, and is a wonderful meditation aid. My weekend has been lovely and super relaxing!
I wish you all a terrific Tuesday, with resolve and success.
~Kes

Missing from your list is the Italian arborio rice for risotto. Rich, decadent, filling, and versatile, my favorite is with chicken & mushrooms or with crab/chili/lemon/arugula (recipe from Nigella Lawson). Arborio is a short grain white rice that becomes creamy and gooey, and may be borderline as far as carb limits go. It's not hard to make at home so long as you chop up all the ingredients before turning on the heat, as it involves about 30 minutes of constant stirring.

If you use a blood monitor could you share the brand? I'm thinking about buying one to figure out how much protein I can tolerate and maintain ketosis. The strips would be useless for a long time now because I've been keto adapted for several months.

Wow Kes, it is great that you try different options and figure out how your body reacts. I should do this too but first I need to understand my weight pattern before trying new things, I doubt I can understand the effect currently :)

@Sss, I've used arborio in the past, and for some reason, I'm not a fan. Japanese sushi rice is also short grain, and unfortunately, it's one that will always kick me out of ketosis, regardless of the amount. :(

@Bluecoaster, I don't use a blood monitor. I've been keto adapted for over a year, and the urine strips are still useful. I mostly use them to confirm what I already suspect. The meter that is most recommended in the groups I frequent is the Precision Xtra.

@Bemusedmarble, I've always been a science nerd, so an experimental approach to diet keeps it interesting and motivating for me. Once I got a handle on staying very low carb, I started playing around with different food combinations, based on a talk I heard. The speaker was explaining how the fiber in whole foods seems to act as a protective factor against the sugars, delaying the absorption. I thought brown rice would be better based on that, but for my body, it didn't hold true.

@April, that's great! I'm a little surprised that rice grows well in Greece. I though the climate would be too dry. I learned something today! Thank you, my friend.

Basmati has a low GI rating. Might be another one worth trying.

@Snoop, thanks! I'll give it a test. ;)

hmm...I just researched several sources and after being on keto for a while, we are really not supposed to be spilling ketones into the urine if fat-adapted. I read that the strips turning pink can actually mean an excess of carbs have been ingested and the body is dumping ketones instead of using them for energy in preparation for glucose management. I hope this helps in some way. Actually, after reading up on all this I think I am better off just checking blood glucose with a simple monitor to see how foods affect me.
