Poached eggs and spinach -- eggs Florentine!-- are yummy. Hit that with a splash of hot sauce or spicy mustard and you've got heaven on a fork. Or you could sprinkle on teaspoon of toasted sesame seeds, zattar, or that Trader Joe's Everything But the Bagel seasoning. mmmm
