Got up a little early this morning as we were heading out of town to an 8 AM Mass for my Mother-in-law who passed away several months ago. Today was her birthday.
No time for breakfast. After Mass and a visit to the cemetery, the family got together at my Father-in-law's home for brunch.
I forgot to bring some chicken I had barbequed last evening for the occasion and most of the pot-luck food was too high in carbs. I did have a couple of servings of two similar egg dishes, one of which included bacon, some red pepper and unfortunately some potatoes.
They ran out of both, though so I wasn't quite able to fill up, but it did keep me from "starving".
We got home about dinner time & I ate a chicken breast with a bit of butter smeared on it. Then I fixed about 3 eggs omelet style with some mozzarella cheese in the middle. I was planning on making some bacon, but then wasn't as hungry as I thought I'd be.
Maybe I'll make a salad a little later if I get hungry again, but I feel pretty full right now.
