Planning on making bison for tomorrow night's dinner.
Any tips?

Much less fat than beef (if that's what you're after). Slightly different taste, not gamey, just different. Medium Heat, do not overcook. Same as beef, if it's a burger, cook to 160F, if it's a steak, 130F for Medium Rare
