I have been reading about how to mix the different types of gluten free flours to make a good all purpose mix to keep on my counter top so I can cook hassle free. I am also researching on how to store the extra four. It is expensive to eat this way. I hope my Doctors are right because going threw this has been a difficult journey and I am only on day 17.... but this is going to be for the rest of my life, I have been told. I made gluten and dairy free pumpkin (crust free) little pies... and they were super sweet...next time I will leave out the sugar or at least cut down the sugar. I also made my first spinach tortillas today and they taste like crackers, not to bad. :) It will be a process.

I make flour out of oatmeal oats.

Unfortunately my body is having issues with oatmeal as well as rice flour, I have given up gluten and now I have to take rice and oatmeal out. I just visited my gastroenterologist and he said to remove those grains for the next three weeks and then try to introduce rice flour again slowly and if I have a problem then my body is intolerant of that grain...same with oatmeal. I am doing well with the diet change, healing wise but it is restrictive. I will be happy when my colon is healed to the point when I can eat broccoli again. :)

Thank you for sharing.... :) I am grateful for the help because this is completely new to me and the doctor taking these grains away is new as of Friday. :)

Hopefully you can get back to your normal self after a few weeks! Keep trying is all you can do!

There is nothing like not being able to eat the things you like. I feel for you. I had to learn to give up bread, rice and potato and I can look back and say, it was good when it was good to me. But, my bread is now "lettuce." Hope you are able to get to the bottom of it.
