hint: cottage cheese, lemon juice, vanilla and sweetener make a pretty good mock cheesecake base

I just did a strawberry one with chocolate, purple basil and mint. was really good even if it wasn't the prettiest. it's really hot in my little office mid-afternoon which is why you keep seeing these.
