Had to stop and sharpen my knife for the tomato, but once i got going was hard to stop. 😁 I ended up making different little sandwiches from all the slices. It was a really good lunch. Lots of flavors. Balsamic vinegar and fresh cracked black pepper on the outside ring. I keep thinking I should break out my white china, I've been using more of my "fancy" stuff during pandemic in the kitchen and elsewhere, but then decided it was a red plate kinda day.

Swap the chicken breast for seitan, and yes, it could easily be completely vegan. Nothing fancy here except thin slicing using a freshly sharpened chef’s knife. And watermelon. Still eating that 18.7 pound watermelon. 🍉🍉🍉
