Barf.

Okay my turkey breast cutlets came out ok last night...although a little dry. They were boneless and skinless and turkey is already a dry meat....anyways...I cooked them too long. I had poured a can of stewed tomatoes over it hoping for something similar to yummy but alas, no dice. It was edible but not good.

Tonight I made Talapia fillets. Someone needs to share a recipe because those things were disgusting. And yes I do like fish....especially salmon and tuna fillets. I guess I must have seasoned them improperly.

Tomorrow I am going to make hamburger helper, but make it with ground turkey instead of ground beef. I am hoping that will cut my guilt. I absolutely love the quickness of "helpers" and the taste is ok. Keith never turns it down.

Im at less than 1200 calories for the day and already had dinner so going to have to figure out something to add in there before 8. Maybe 200 calories worth of creamy chocolate? OH YUM....IDK....maybe I shouldn't.................

One way I like to fix Talapia is to bake it in foil. Place the fish in the foil. In a bowl place a little melted margarine/butter and dry Good Season's Italian Seasoning mix. Pour the mixture over the fish. You can also top it with chopped onion and/or mushrooms if you like. Fold up the fish in the foil and bake it on a cookie sheet at 375 for probably about 20 mins or so until the fish is flakey.

Bummer about the turkey & fish! I used to work at a Winn-Dixie super market, the gal at the fish counter would make the best tilapia. She put in a shallow coverd microwave safe dish, sprinkled a bit of Ol' Bay seafood seasoing, a lil' pinch of season salt and cracked pepper. And microwaved it. Not sure how long to nuke it but it was delicious! MA.... I hope you have a wonderful day! I've been so busy this week, I feel I haven't had much time to talk with you. Since you said you haven't walked lately, maybe you could get out in the sunshine today? (((Hugz)))

I'm sorry your turkey and fish didn't turn out well. I can't say I've ever cooked turkey on my own, but I know my mom puts in some chicken broth with turkey when she cooks it. I think I may try cooking some turkey one of these days. lol. It'd be nice to do on a cold day, so the stove can help heat the house. :) If you have a bit of a deficit, then I'd say have something nice. If I need 100-200 more calories a day, then I'll have a cup of yogurt, or cookie to balance everything out. But I only have one serving/ enough to make it over the 1200 mark. ^.^ I hope you have a Great and Healthy day.
