Glad to report that I didn't gain any poundage yesterday, but didn't lose either. That's okay. I'd rather maintiain that gain! I ended up re-heating our breakfast blunder from yesterday, this morning. My, was it good! Reminds me of the chicken dinners my grandma used to make. Had a nice salad with it, too. Here's to a GREAT THURSDAY!

VERY simple! Just put chicken, small potatoes, cut up onions (wedges), and baby carrots into a baking pan. Sprinkle with Johnny's Seasoning, generously. Pour in a cup of water. You can add a little butter on top too, if you'd like. Cover with foil. Bake at 375 for about an hour to an hour and a half. (Bake long enough for the potatoes and carrots to be nice and soft.)
Very simple and tasty. Reminds me of my grandma's chicken and dumplin's minus the dumplins. =)
