I've been pretty good about my eating this week so far. I have fallen into a routine of my cereal and soymilk for breakfast, a snack before lunch, a veggie burger for lunch, and maybe some herb-roasted potatoes for dinner. OK, so maybe eating too much of the potatoes is not so good, but I do not load up on them.

I've been trying to copy Niko Niko's roasted potatoes, and I haven't come very close, but I've learned from the first two attempts. Now I make them well enough that Pat LOVES them, and we save money. Two roasted potatoes from Niko Niko's cost us about $5. A ten-pound bag of potatoes from Wal-Mart costs us $2.50, and it takes a looooong time to finish those. I just quarter the potatoes after I peel them, pour some chicken broth into the baking pan, add a light sprinkle of chicken broth powder onto the potatoes (not too much because it is salty), garlic powder, and put lots of parsley, Italian seasoning, oregano, and some extra virgin olive oil. YUUUUUUMMMMMMYYYYY.

And if someone scolds me about eating potatoes, I'd say, it's OK because I've been doing gym time at Fitness Connection. Today I did 55 minutes on the treadmill, did lunges from one side of the gym to the other TWICE, did abs, arms, and worked on my thighs.

Ah, I have to talk about my thighs. They're getting leaner for sure. Last night I was watching TV and happened to look at my thighs, and I could not believe how I could see lines and some cuts in them. I have NEVER had cuts in my thighs. Maybe in my legs, yes, but not my thighs. I kept poking at my thigh muscles until Pat told me to stop showing off. But she had to admit, my thighs are looking good. Oh yeah.

If only the lean muscles would work their way up to my torso.
