Concerned about the slight increase in weight, even though according to my diet calendar and exercise calendar, I am always spending far more calories than I am consuming. On just one day out of 7, I exceeded the RDI, however, this has been more than offset by my diet on the remaining 6 days. I wonder how this weight loss thing works.

Weight loss is weird, lol! Small gains when you are on plan is mostly water weight. It could be from too much sodium, hormones, stress, medications, sickness, a high caloric day, etc. Even exercise can cause muscles to retain water and it may show on scale as a gain, no loss or small loss (temporary gain). Just keep going and the scale will eventually catch up.
