Happy Independence Day!
Hermosa Beach is the Partay Place to be on the 4th. I took the Beast out on our reg walk-which includes the beach. Oh the humanity! Fleshy people parts everywhere, cacophony of sound (I heard rap, blues, rock, Electronic ALL playing at the same time). Mounted police (the best part). People being dropped off in cabs. buses and minivans. The day begins with the annual Iron Man Contest-a triatholon-run, bike and then chug a six pack. The first to finish without a) puking or b) passing out or c) dying wins! A quaint tradition, isn't it? The day unravels completely from then on.
We will stay in our little house on the hill (fortress) until Tuesday. I think neighbors invited us over last week but have not heard anything from them since-so guess we will play it by ear. Making chile corn bread just in case. Was going to make flag cake but am afraid in case we end up not going and then I will eat it.
Definitely will make watermelon/feta/olive salad.
Watermelon chunks
feta cheese (can use non fat)
halved kalamata olives
sliced red onion marinated in juice of a lime
fresh chiffonade of mint
olive oil (I some times use just a drop or none at all)
Mix it all together. It's absolutely delicious!
