I've decided that this year will be the year that I get healthy. Really healthy. Not semi-healthy or "good enough" - but healthy. I want to reach my goal weight in this coming year. I want to run a marathon in 2014. I don't want the specter of my weight constantly weighing on me or hanging over my head.
Most importantly ... I KNOW that I can do it. So I will.

In other news, I discovered the sheer adaptability of zucchini this week. Zucchini hashbrowns - straight up delicious. Not the exact same as potato hashbrowns but good enough that they're an acceptable replacement.

Also, zucchini dorito chips, YUM! Plus they help me get a few more of the veggie carbs in that I need. That is always good.

There is a zucchini hashbrown recipe that I tweaked. This what I did: 1/2 Cup of kraft parmesan cheese 1 tbsp olive oil 1 large egg 1 tsp garlic powder 1 tsp onion powder 1 cup shredded zucchini Squeeze the liquid out of the zucchini, (I do that by putting all of the shredded zucchini in a clean dish towel and squeezing all of the moisture out.) Then mix together everything except the olive oil. Heat the TBSP of olive oil in a pan on the stove and then drop by spoonfuls into the hot skillet. Brown on both sides. Be careful with the flipping or they'll just fall apart so be sure they're browned before you do that. It's 2 servings and I get 4 small 'patties' out of the recipe. I'll send you the link for the doritos. I use a food dehydrator but the recipe on the site doesn't require it.
