Well today I ventured out once again and finally did something with the frozen mashed banana I had in my freezer. I came up with a yummy low carb banana muffin. The pic and recipe is below if anyone would like to try it. Oh, all I had on hand was some jumbo muffin cups which I bought by mistake some time ago so the muffins look small in the pic.



1/4 cup butter, softened
6 eggs
1/4 tsp almond extract
1 tsp vanilla extract
1 cup mashed banana

1/2 cup coconut flour
1 tsp baking powder
1/2 cup stevia in the raw
1/2 tsp sea salt
1/2 cup chopped walnuts
120 grams of Ghirardelli 60% Cocao Bittersweet Premium Baking Chips (which is 8 servings or about 128 chips)

Preheat oven to 350. Grease muffin pan or use paper muffin cups.

Mix 1st 5 ingredients well. Stir in dry ingrdients, adding the nuts and chips last.

Bake 20-30 minutes. Remove from pan and let cool.

Serving Size: Makes 12 muffins
