Coach_B's Journal, 15 January 2016

Ok, there's the slow down, I knew it was coming. Still, down 12 lbs this week, I am NOT complaining! Yesterday, I once again stuck to a strict Keto diet, staying under 10% carbs has been relatively easy this week. Most of the carbs are coming from my Old Home Natural Peanut Butter, I love that stuff and it's sugar free. I'm going to try to move away from that next week and try to find an alternative for my celery sticks at lunch.
My blood glucose level was 93 today, down 25 since Monday. Hopefully, that will continue to be the trend. I also had 160oz of water again, man, that's a lot, but I have found myself extremely parched at different times throughout each day.

Thanks for all the support, have a great weekend!

I just had a brain storm! I don't know why I haven't mentioned it sooner. Remember the MIM? This is good for new people that are having trouble giving up bread. It is a muffin in a minute. Take one egg, 1 tsp oil or butter and I use a tsp of vanilla too mix it up real good in a coffee cup sprayed with Pam. Now add 1/4 cup of milled flax seed which has been mixed with 1 packet of splenda and 3/4 tsp of baking powder. mix it up with the egg mixture in the cup and microwave on high for 55 seconds, no longer than a minute. Turn upside down on a plate and it makes a great big muffin. I slice mine into 4 round slices. butter and eat it warm. You may have to develop a taste for it, but it is good and 1.91 net carbs. Top it with some sugar free jam (50/50 brand is good). What a nice way to start the day or a mid afternoon snack. I just thought I would mention it.

I might add, it is very filling.

@Coach_B, since Keto works best with an emphasis on fats, maybe try butter, cream cheese or even braunschweiger on your celery? Do your self a big favor though. READ THE LABELS on the cream cheese. Find one that has essentially just milk vs. a bunch of additives, preservatives, whiteners, etc.. I had to buy some sour cream a while back and found that out of the 5 or 6 different ones, the only company that had cream & milk in it was Daisy. Not sure how they stack up in the cream cheese but read the labels and find the one with the least ingredients other than the product you're buying. One of the brands of sour cream had maltodextrin which added 4g/serving of carbs.

Diehard, I'll look into those MIMs, sound good. Thanks for the idea. Frosty, I'll check my labels on cream cheese, I do buy Daisy sour cream, good to know that's recommended. Thanks for the support!
