Well, I'm all out of bacon! I will not buy anymore because it is so high in salt and I have been trying to cut back on the salty items. I will cut out the chicarones too. I am holding onto water because of it...I can see it in my feet. So, I know that the 2 pound increase is not FAT...just water. I will miss my greens and "fatback". Gotta find a less salty recipe because I will NOT be cutting out those delicious cooked greens!

I also made a recipe for egg nog. I don't want to get tired of eggs so this is my new way of getting in some eggs. DELICIOUS! Plus, I pour it in a fancy tulip glass and that makes it all the better!

I only have 3 more days of care taking...counting down. In 3 days I will be free to leave my house whenever I feel like it! No more imprisonment, I can go to the park to walk, cease cooking special meals, forget about serving all the needs of another person and hopefully relax and catch up on some rest that I have needed for 3 years. I thank God for His help in finding appropriate placement...I feel like He is looking out for this whole family, especially me.

I tried something last week, bought a fresh pork loin and had the butcher cut it reeeaaal thin, almost like canadian bacon, cooks up in a flash and makes a great meal or snack

I will have to try it! I'll compare the sodium/sugar contents between the two. I never thought about using fresh pork! Thanks.

Can you share your egg nog recipe? Also I notice you eat coconut oil, and sole cider vinegar. How and why do you use these?

I use virgin coconut oil for the brain & candida yeast control. I use apple cider vinegar (with the mother)for candida yeast control. Both of these are really healthy for anyone, plus I can bump up my fat grams and my potatassium. There is a lot of research on the health of coconut oil and short chain fatty acids. Here is a link to some basic info. http://authoritynutrition.com/top-10-evidence-based-health-benefits-of-coconut-oil/ Recipe for egg nog: 3 FRESH raw organic cage free eggs 2 Tblsp organic whipping cream 6 oz ice cold water 1 tsp vanilla Mix it all in a shaker cup, add stevia to taste. Pour into a pretty glass and top with fresh ground nutmeg. (Don't panic! Raw eggs are OK and have their health benefits too.) It is on the food list under Egg Nog for nutritional info.
