Chicken Teriyaki with lots of veggies, garlic, ginger & red pepper flakes... So much yum!!!

Thanks guys! The food was delicious and the table decor really does make for a more pleasant dining experience! I wish I could take credit for the decor but that's all my sister-in-law! She's got the Martha Stewart thing going on! idler103: the pumpkins are naturally white! No paint! I would imagine the macros are the same as or similar to regular pumpkins! lol!

My friend had a lime green one. I thought it was ceramic? Naturally appearing colors or GMO?

ruthe1213: I've seen a lot of cute ceramic ones in all different colors too! I am not sure if these ones are gmo or not. From what I've looked up they are edible & there are organic, non-gmo & heirloom white pumpkin seeds available to grow. The white variant seems to have been naturally bred.

Chicken Teriyaki *4 chicken breasts (boneless/skinless & cut into strips.) *1 green bell pepper (cut into strips) *1 red bell pepper (cut into strips) *1 onion (diced) *2 C snow/snap peas *2 TBSP olive oil *2 TBSP sesame oil *teriyaki sauce (we used homemade & it was served on the side. I had a 1/4 cup portion.) *rice (we had white rice so I only had 1/4 cup but easily could have gone without or used riced cauliflower.) 1: Heat olive & sesame oils in pan on medium heat. 2: Add & cook chicken until no longer raw. 3: Add & cook veggies until crisp tender. 4: Serve over rice/riced cauliflower or as is. 5: Add teriyaki to taste. 6: Top with crushed red pepper flakes, toasted sesame seeds, pepper, garlic powder, etc... ** as we have a toddler & 2 older finicky children we don't add the spicey stuff to the food during cooking but it can definetly be added with veggies to imbue heat throughtout. Also since I have diabetes and track my carbs the teriyaki sauce is added by each of us after cooking but can be used to marinate chicken before cooking and/or added during cooking.

Teriyaki Sauce *1 C soy sauce *2 TBSP corn starch *2 C water *1 TBSP minced ginger *1 TBSP garlic *10 TBSP brown sugar 1. Using a little of the water make a slurry with the 2 TBSP corn starch. 2. Combine corn starch slurry with all other ingredients in a pot & bring to a simmer. 3. Simmer until desired thickness. 4. Serve over chicken, rice & veggies. Can use as a marinade or dip. ** If you are keto, LCHF, Paleo etc then this sauce is obviously not appropriate for your WOE. But you can look up and/or experiment with alternative ingredients. Such as tamari or liquid coconut aminos instead of soy sauce... Arrow root, coconut flour, reduction, etc... instead of corn starch. I'm not sure what alternatives would be for the brown sugar? I know Splenda makes a brown sugar substitute but I avoid all artificial sweeteners so I have no idea how this would work!

Stevia or Xylitol are a couple of low carb and natural alternative sweeteners that might be good choices, though it wouldn't have quite the same flavor as brown sugar. Maybe adding a tiny bit of molasses in with it? You have to be careful with Stevia, though; as the sole sweetener in drinks or foods, it can be a bit bitter depending on the brand.
