Bluecoaster's Journal, 27 July 2017

A few weeks back someone was complaining that all the bags of Coconut Flour were so darned expensive everywhere. Just want to mention that they sell Coconut Flour in the bulk bins at Whole Foods for $3.99 a pound- at least in California. 👍😊

Now I'm curious about how this fits into a keto plan.

Oh- coconut flour is a wheat flour alternative. The mini bagels I posted a couple of weeks ago were made with scrambled egg, shredded zucchini and a bit of coconut flour. It has good fats and no bad carbs. Its high calorie but you don't need much.

Well, I don't mean to say it's a 1 to 1 replacement, it is definitely not! I'm just saying you can bake with it. You can taste the coconut a little but so it's great for muffins etc.

Now, for the first time in my life, because of you Bluecoaster, I may be wishing I lived in California? lol I know the prices in WV are way higher than that you posted. Sad to say.

You might want to stay away from the bulk bins of any grocery store. They're not air tight and furry things get in there to enjoy the goodies. Used to work nights at a grocery store in Cali. :-)

Ewe! Furry friends? Wouldn't that be against the health code for them to have a pest problem? 😝

SLLockhart- if you look at the price of housing in decent areas of Northern California and you will see there is no money to be saved here. The fixer-upper houses in my city cost $500,000 now. Its ridiculous. The median price in San Francisco is 1.1 Million! I vote for West Virginia's overpriced groceries instead! 😂 Los Angeles is worse. Disgusting smog and traffic, but insane housing prices because it's, well, L.A. 😕

Ah Bluecoaster, I am not going to California, not for anything. lol It was just what I was thinking. My older brother used to try to get Hubby and I to move out there, no way!! I love my mountains and I will just pay more for those kinds of things, like the Coconut flour, instead of living out there. Thanks for the comment tho. I have no desire to leave my mountains. lol

I bought 5 lb bags of coconut flour at either Sam's Club or Costco. It was at a reasonably priced.

Mommyhilaman - coconut flour tends to absorb a lot more liquid, so it's best if you start out with recipes which take that into account. I've baked a couple of times with it and the resulting bread was good, but a lot denser than regular bread. Google coconut flour recipes - there are a gazillion out there!

Mommyhilaman- no, it doesn't really resemble wheat flour's taste but it can produce some really delicious baked items. I personally think it smells wonderful- something I would never say about wheat flour! If you want to try it I suggest using a recipe that is already written to use coconut flour so you can see how it absorbs liquid so easily.

which recipe do you suggest that i try?

Mommyhilaman, try any of Bluecoaster's recipes. No funny business in them, like there are in many online variations.

You can try my super healthy zucchini Walnut muffins with berry cream cheese. They just use a very small amount of coconut flour so all the ingredients are really fueling your body. If you want to make something more decadent but that is still low carb, try these double chocolate chip muffins from lowcarbyum- my kids went nuts over them- https://www.lowcarbmaven.com/chocolate-zucchini-muffins-coconut-flour/

Mommyhilaman- also I plan to be working with coconut flour today to make some very low carb& low cal tortillas and if they turn out well, I will post that too. 😊
