Baked Eggplant with Parmesan
slice eggplant cross wise(leaving skin on) 3/4" brush with olive oil
sprinkle liberally with good seasons zesty italian package mix
bake at 400 for 15 minutes until cooked through
remove and cover pieces with fresh grated parmesan and cook until cheese is melted and starting to brown.


Sounds sooo good! And easy!

I'm on the atkins website and finding things. Using my journal for keeping them for later. :) Spinach Artichoke dip 1 10 oz frozen spinach 1 can artichoke 1 cup parmesan/romano cheese 1/2 cup mozzerella 10 oz alfredo (jarred is fine) minced garlic 4 oz cream cheese

Dani, why don't you put all this in your cook book. It's an easy way to keep track of the nutrition too and easier to find than going through your journal looking for a recipe.
