I just took my turkey out of the oven and you'd think I let it set in a bath of butter all night long. zomg. The only way I'll cook turkey going forward! Here's to slow roasting, cooking fast is a pandemic tragedy!

Agreed, philmack. I will put mine in the oven tonight before I go to bed. I love it when it falls apart the way it does, probably on about 250. I'm doing my LC cranberry sauce and LC desserts today, and will prepare cauliflower "mac n chs", LC stuffing, and green beans tomorrow. Glad the turkey turned out yummy!

I am going to start on my southwest stuffing this evening. I might make peanut butter blondies too. I'm so excited about Thanksgiving dinner!

Philmck, can you give me the directions for slow roasting a turkey? I would love to do that with mine.

Put your prepped turkey in a 300°F oven for an hour then slow roast it an additional hour per pound at 200°F. I had a 13 pound turkey so I put it in at 7:00pm last night for an hour @300°F then roasted it till 9am @200°F. I just finished one of the legs (quality control, you know) and it was delicious!

We are having:
1.)Baked chicken --> Already baked, just needs warmed up.
2.)Lower sodium Stove Top Stuffing --> Pretty quick to do.
3.)Corn --> Frozen but only takes a few minutes.
4.)Butternut Squash (instead of sweet potatoes) --> Takes longer to cut up than to cook. It's quicker to cook than sweet potatoes though.
5.)Pumpkin custard (pie filling without the crust) --> Don't know. My wife takes care of that. Probably should do it today if she feels up to it.
Not exactly traditional, but over the last couple of years, my wife and I have lost our taste for turkey. With her medical problems and restrictive diet and with my diet that doesn't match hers, It's kinda hard to have a traditional holiday meal without cooking way to much food.
