This happened today : I have had everything in my kitchen/pantry/refrigerator/freezer to do this except I didn’t have Swiss cheese. Been thinking about this for awhile. Today I went to WallyWorld to buy Drano and picked up some Swiss cheese. lol

Pumpernickel/rye marble bread, a 7 oz burger, sauerkraut, thousand island and Swiss cheese. Red potatoes with a puréed cottage cheese and dill spice dressing. Dill spears. I ate half but intended to eat it all ! In the fridge for later I likely can rescue the Sammy and crisp it up in a hot cast iron grill. Oh…I grilled the sammy on the stovetop with a slathering of mayo in cast iron. This was yummy but not typically how I eat.

I just did an educated guesstimated estimate on the calories and it’s 1422. Good thing I ate half… but the day isn’t over yet.

Oh, wow... I'd blow off calorie counting for day just to eat this...

Unity I didn’t have room in my belly it was just too much. But give me a few hours. Lol . Red meat in my diet is rare. But I do keep some burgers (already grilled ) in the freezer because sometimes my body wants that nutrient boost. It’s also way more saturated fats than I usually have in a day…between the cheese at breakfast, the Swiss, and beef. When I usually eat animal protein it’s 3 or 4 ounces.

Shirfleur thanks !! I took a pause in the potato chip aisle at the store…thought that would be excessive. lol

I giggled when you said red meat in your diet was rare. 😁😄😊 I needed a giggle today... been waaaaayyyy too serious, lately. Thank you!

Unity you are so funny ! When I said rare I meant not frequent. I probably have one time a month and then usually 3 or 4 ounces. These burgers were already “preformed” in the meat department with cheddar and jalapeño and huge. I bought 8, grilled outside and put in the freezer. Sometimes I might chop up into chili or a Tex mex kinda dish.

Patty melts of all kinds are the cat's meow to me Honeebuns, but for now I am still avoiding bread. That may change in the future, we will see how things go!

Debra yes grilled are the best ! I usually opt for lo carb hi fiber wraps when eating sandwich style. I have had toast with breakfast once this week and now this today. I keep bread in the freezer and usually buy those small half loaves from the grocery deli. Bread tends to be more calories than nutrition. Having bread twice in one week is an anomaly.

Looks delicious! If I had the bread, I’d leave off the potato or vise versa. I try not to go over 20-30g carbs per meal due to my type 2 diabetes. Too much of an insulin spike.

Storms thanks ! I understand and have similar thoughts but different priorities. I limit refined carbs so this type of bread isn’t typical. My body handles carbs well. For me I try keep my saturated fats at about 6 grams per day. Most of that usually finds its way in my diet from nuts, olive oil, fish and avocado. So the queso at breakfast, the two slices of Swiss in this, and the cheddar cheese in the burger, and the size of it 7 oz. That’s about a weeks worth in one meal. Lol. I aim for about 45 grams of fat a day but prioritize the mono, poly and omegas. The potatoes are probably for me the healthiest thing about this meal. The dressing is fat free cottage cheese I puréed with my immersion blender and stirred in olive oil, green onion and some dry spice mix. I ate half of it all yesterday and may have the rest for lunch today but just eat the potatoes and pull out the burger and toss the bread and the Swiss cheese on it.
