Breakfast…2 eggland’s brown eggs w 1/4c 4% cottage cheese and 7g hard Parmesan cheese, 5 asparagus spears, 3 turkey bacon 🥓 (I ate one before photo lol), 1 tbs creamy PB, and 2 cups coffee w Torani’s SF s’mores w Thai coconut cream. Have a good Saturday!

Looks fantastic! Two questions: do you mix the cottage cheese in with the eggs while you are scrambling them in the pan? Also, what did you eat the PB on?

@larilyn…I had to take my ibuprofen as soon as I woke up due to wisdom tooth extraction pain, so I don’t like to take meds on an empty stomach so I ate the creamy PB just off of a spoon! (Weighed it, 14g on my food scale from Walmart). I also had my coffee w SF Torani’s s’mores and coconut cream (Canned Thai coconut milk) to coat my tummy w some healthy fats. About an hour later, I made the rest. I cracked 2 eggs in a bowl, then weighed in 1/4c of the cottage cheese and 7g Parmesan plus, a dash of Himalayan pink salt and black pepper in that bowl and whisked it. I sprayed my pan w olive oil spray (2 squirts) then cooked it all together. I got that idea off of Instagram. The eggs come out soooo creamy and delicious!
