i was never a big mayo fan, but I'm hooked on the silken tofu mayo recipe from the Veganomicon cookbook. Makes a great salad dressing, too. Today's lunch is quinoa, edamame, broccoli, cucumber & carrots + the vegan mayo

I don't like mayo or most dressings. Very picky.

Totally get that, Morticia. When I was a kid, I couldn't stand ANY salad dressing. When I was a teen, I'd order my salad without dressing in restaurants and get some variation of, "Oh, someone's on a diet!" 🙄 I only made peace with regular mayo in the smallest quantities needed to glue tuna together or make deviled eggs. This stuff has some garlic and spice to it, and it's a much different experience than real mayo. I'd never in a million years dump actual mayo on top of this dish like this 🤢
