Came across fresh Hatch Chiles yesterday. Roasted them and stuffed them with fresh corn cut from the cob, black beans, bulgur, nutritional yeast, roasted onion and bell pepper. Seasoned with garlic, cumin, chili powder, salt & pepper. 3 stuffed Chiles with smashed avocado and baked corn tortillas was 587 calories, 19 grams of protein, 18 grams fat, 84 grams carbohydrates and 21 grams fiber.
