Another successful yogurt adventure. A 3-quart batch straining in my downstairs fridge. I'll get a quart and a half each of Greek yogurt and whey out of this. The stuff turns out like cream cheese -- I spread it on toast.

I love making yogurt and also strain some of the batch to make labne. How do you use the whey ? I have run out of ideas. Thanks !

My husband uses most of ours as the liquid in sourdough starter. Even if you don't make sourdough, you could use it as your liquid in bread baking. I've added it to the water when making stock as an acid to leach a few more minerals from the bones. Works in soups. I've read you can use it as the liquid in cooking grains, but I've only tried that in oatmeal, and I didn't care for it much. Might be better in other grains. I honestly like the stuff enough that I drink it straight up -- tangy, refreshing, has probiotics. Has a little viscosity, which I can see might be off-putting. If you don't care for drinking it straight, you could blend it into smoothies. I've watched YouTube videos on making ricotta from it, but that looked like too much effort for a small amount of ricotta for my tastes
