Did a lot of hiking yesterday and a lot of sleeping today! I hope they are balancing each other out. Made a big kale, avocado, and sunflower seed salad from our gluten free cookbook- yum. Trying to cut down on carbs- can't believe how many carbs are in fruit! and everything really. I think my challenge this week is going to be to fight the carb creep. no more mangos for a while. going to try watermelon and canteloupe for a change. bought some grapes but they too are high in sugar and carbs. hmmm. maybe more vegetables, less fruit.
