Just finished making low carb coconut flour pancakes. They came out a LOT better than I expected. Even the kid and the hubby ate them. Big surprise!! I'll submit the recipe I used and maybe it will be added to the recipes for here. Even if it doesn't I'll still have an easier time of entering it than keying it in one by one. I just need to pick up the low carb syrup that I used to use and all is good.

If you use a photo on the entry aomething as unusual as Coconut Pancakes is a shoo-in. Does the flour give a coconut flavor? That coupled with unrefined coconut oil would make a really tasty treat that needs no other adornment!

It gave a very slight coconut flavor. Not much at all. My son does NOT like coconut and he still liked them. I did submit it with a picture but it was when they were in the pan just before I put them on a plate. The husband did not want to wait for his while I took a picture on the plate. (He ate 2 servings, it was the 2nd serving he was inpatient for) I would put unrefined coconut oil on them but they like syrup and I like the Walden Farms one so I can compromise.
