Sweet potato yogurt mousse. I realized I had zero fiber today so I am fixing it with this.

So easy. I had already baked some sweet potatoes earlier. I literally scooped half of it out of the skin and into this mug, whipped it with my fork and then added a spoonful of yogurt, including some whey to thin it. Added a little cinnamon and stevia and a teaspoon of granola for crunch. I'd rather use pepitas, but don't have any on hand at the moment. It was sweet and delicious. The sweet potatoes were cold. You could try cocoa, maple syrup or other things to mix it up. I was thinking walnuts would have been nice, but, once again, use what you have.

Always plain yogurt, this was Greek yogurt, 2%.
