It's been 12 days since I last logged in but I have not been idol besides working 5 days a week I have taken sometime off to see the following movies:

Like a Boss: Loved this movie but most guys would refer to this movie as a chick flick. (Okay just for the records I saw a few guys with their ladies in the theater and it was completely sold out.)This is a girl power movie that shows how a friendship can continue over time with best results. (Surprise guest appearance)

Bad Boys: Okay growing up in Miami, Florida this movie is literally film in locations I have grown up around a few I could figure out but I love the Bad Boys series of movies. (YES, guys you will love this movie lots of action and lots of funny scenes.)

January 23rd dusted of my sneakers that are always in the trunk of my car. (Convenient as I never know where I will end up and want to walk as I love being out in nature. Current doctor has no problem with me walking in the park as opposed to my old doctor.) Left work at 11:00 am for an early lunch. (Beautiful day and no rain, not cold but a nice 74.) I completed walking 1.22 miles in 25 minutes. (I stopped at the exercise stations along the walk and did 20 reps at every station. It's my hope to get to do this on a regular basis as the park is 10 minutes drive from my job.)

I am not sure but I believe I had a little too much caffeine on January 24th as I couldn't sleep so got up early on January 25th (Chinese New Year- Fire horse is my sign if your curious made sure that red wreath and red door matt was in place for good luck, hopefully next year I can get tickets to the lantern festival in West Palm Beach) Instead I stripped my balcony of all plants and gave it a complete scrub down including railing, glass sliding doors and screens, I even took the lighting fixture apart to clean it and discovered it was damaged and needed to be replaced.(Only tenant in the building that takes care of my balcony, the landlord broken fixture today before I came home) I know we are still in winter but the hibiscus bush on my balcony thinks it's spring as it's starting to bloom flowers. (So you could consider this my exercise for the day along with a load of laundry.)

I still had energy to burn yesterday so I stripped out my kitchen and went to degreasing the kitchen cabinets from floor to ceiling. (White so dirt shows up easily, but they look just like the day I moved into this apartment) I even pulled the refrigerator out and cleaned behind it. (No dust bunnies in my kitchen as I do this on yearly basis can't stand roaches so I am a bit of a clean freak - Like using Method cleaning products as they are not toxic and smell great.) Once that was done I proceeded to the guest bathroom to replace the flush lever (I got the old one off with a little elbow grease, but had a hard time tightening up the replacement one properly. Landlord finished the job for me today. I am carpenters daughter so I like to do maintenance on my apartment, but I also let the guys know when I can't handle something and I give it over to them to complete. I bribe them with fresh baked cookies when I am in the cook from scratch mood. They know anything coming out of my kitchen is made fresh and kitchen kept spotless. The landlord say "I enjoy coming into your apartment as it's always clean and smells so good".)
In between cleaning and repairs I cooked the following recipe in the slow cooker.

Tangy Pork Chops
Prep: 25 minutes Cook Time: 5-6 hours low heat

4 1/2 inch thick pork chops (No Bone, No Fat)
1/8 tsp. pepper
2 medium onions
2 celery ribs (chopped)
1 large green pepper
14 oz Fireroasted Diced Tomatoes Garlic (Hunts)
1/3 cup Ketchup
2 Tbsp. cider vinegar
2 Tbsp. brown sugar
2 Tbsp. Worcestershire Sauce
1 Tbsp. lemon juice
1 beef bouillon cube
2 Tbsp. cornstarch
2 Tbsp. water 4

1. Place chops in slow cooker. Sprinkle w/salt and pepper.
2. Add onions, celery, pepper and tomatoes.
3. Combine ketchup, vinegar, brown sugar, Worcestershire sauce, lemon juice and bouillon. Pour over vegetables.
4. Cover. Cook low 5-6 hours.
5. Combine cornstarch and water until smooth. Stir into slow cooker.
6. Cover, cook on high for 30 minutes or until thick.
7. Serve over rice. (I use Parboiled rice)

Can substitute beef, chicken legs and thighs instead of pork.

I decided to share the recipe as it was absolutely delicious and made for a great lunch today.

I bought a slow cooker last year with hopes of getting back into cooking meals at home instead of take out.

Next recipe I will try will be Chicken in a pot after making a trip to the farmers market to get locally grown vegetables.

Sorry didn't take pic but will next time and post. Smells drive my neighbors crazy. (They ask for whatever I am cooking but sometimes I start cooking at 5 am and they say it's not fair I woke them up with the smells.)

Looks like the recipe would be quite tasty. What nutrition info does this diabetic cookbook include?

All of that cleaning counts as a workout!!! I wonder if this recipe would be good in the Instant Pot? HMMMM. :0)
