Here’s the recipe for the Chimichurri Filet Mignon with sautéed mushrooms for 2! Have fun and enjoy!
Filet Mignon for 2! First season and sear (without disturbance) in two tablespoons of butter for two minutes on each side in a cast iron skillet.
Then transfer skillet immediately into a 415F preheated oven for another 4 to 6 mins from Rare - Medium-well temps. When ready, remove and rest the filets on a cutting board, while prepping your chimichurri sauce.

In a food processor. Add 1 cup cilantro, 1 garlic clove, 1/2 tsp smoked paprika, 1Tbsp fresh lime juice, 3Tbsps red wine vinegar, 3 tablespoons extra virgin olive oil, 1Tspn of red pepper flakes, salt and pepper to taste, blend well until smooth

Serve 1 tsp or 1 tbsp as desired, on each filet.
