What the heck! How can I eat one meal a day never overeat usually less than 1000 calories including healthy fat and still gain even an ounce!! I'm inclined to hide the scale. So discouraging
173.4 lb Lost so far: 12.6 lb.    Still to go: 33.4 lb.    Diet followed reasonably well.
gaining 1.4 lb a week

Sometimes when you don't consume enough calories your body goes into a mode of , if this is all the calories I'm getting, I will not let any weight go!!! It's been a proven fact, your body is protecting it self from a starvation mode. There is many articles on the subject, you might actually have to increase calories in order to get weight loss.You need to confuse your body !!!

Definitely agree with DO N OK - but, also, have you considered that you may be building muscle mass? How active ARE you? I don't see any exercise entries in your food journal this month.

Look at weight loss over a month or 2+ weeks instead of a couple of days.

Yes, I've tried the extreme low calorie thing - it doesn't work for me. In fact, it usually backfires!

it might be that you are eating too little calories~ I had the same problem before, I ate 1000 max each day, lost weight fine in the beginning and then it stopped... I informed myself and decided to eat between 1200-1400 a day, cause i wasn't eating enough, and voila I started dropping weight again :P Sounds odd, but give it a try for a week? most important is to not go under the 1200! I mean, keep it as close to it as you want, but not lower, cause your body is probably confused about the extreme change from normal too lower than 1000 Also try and eat protein every day (meat or fish), so you body isnt gonna start to loose muscles. If you eat below 1000 calories, it can happen that your body thinks: "Whoops! whats going on? Gotta keep that fat! muscles? mehhh.. fat is more important!" XD Good luck though! (so in short: maybe try eating 1200-1400 calories for a week and see how it goes)
