I'm so proud of my mom today!

She had her 1st Fast Day and kept it down to 357 calories!!! She is 58 years old and is diabetic. She has tons of bodyfat from decades of eating without any concern about her health but has taken the decision to improve her health.

I started her on 16:8 some time back and that made it much easier for her to attempt and succeed on her 1st fast day. Keep in mind that she loves her food so if the hunger became too unbearable she would not be able to fast.

I decided to make her consume food that was low calorie but high in volume so cooked cabbage and roasted butternut was chosen.

She had her 1st meal at around 3pm and it was 200g cabbage and 200g butternut.

Here is a pic of her supper : 200g of cooked cabbage and 250g of roasted butternut which added up to just 184 calories!!!

But she couldn't finish her supper as she felt so full so she only ate 100g butternut and 75g cabbage. I have given the calories above for the full plate of food although she didn't eat it all. The 357 calories for the day comes from her lunch and the portion of her supper that she did eat.

Just wanted to share this with all of you to show an example of how one can eat alot of food on a fast day and keep calories low. Just look at how much food is on that plate for under 200 calories!

Kimmy the trick is to google a list of low calorie veg and pick the ones you enjoy eating. Butternut and cabbage gives so much quantity for their calories that you can actually add some steamed chicken to the meal and still keep it under 500 calories. Mushroom, broccoli and beetroot are also some of my favorites. Hope my post helps you make your fast days better :)

I think I should come eat by you on my fast days, you have it all worked out lol Honestly I am not the best cook and half the time I dont know how to cook some of the veggies and when I try they taste terrible... Think I should take up some cooking lessons lol

Lol Kimmy, Keep it simple! Roasting butter nut is soooo easy that even I can do it. Keep the peel on them as it is edible. Beet root can also be roasted. Stuff like cabbage, mushroom, etc. I just use the microwave unless my mom cooks them. The problem with cooking veg is that it may need oil which adds calories to them. You can find so much info by spending some time googling. I share as much as I can on here so it saves you some time too. Roasting, microwaving or steaming veg is the best method to keep them low calorie as opposed to cooking them as a curry or with butter. Some vegetable like potato is 3 times or more the amount of calories that butternut is so dont eat those kinda veg on fast days. U must enjoy the taste of the veg to feel satisfied and look forward to eating them :)

Im going to do some googling this weekend and see what i can find. I love roast potatoes but have only had that once in 3 months. I have decided to stay away from rice, potatoes and pasta until i reach my goal weight. The only beetroot i have ever eaten is in a bottle from spar lol

Noooooo, buy fresh beetroot, clean them, cut in cubes and roast in the oven just like how u would roast butternut, pumpkin, potatoes, etc. Try roasting sliced brinjal, the big type. I love the wholesomeness of eating such veg.
