This meal goes together quickly using pre-cooked shrimp, and is also yummy over pasta.
Ingredients
Directions
- Heat olive oil in fry pan.
- Add chopped onion and minced garlic cloves. Cook until softened.
- Peel zucchini and slice lenghwise, then slice into 1/4" slices. Add to onion and garlic mixture. Cook until tender-crisp.
- Add sliced mushrooms and cook until soft. Then add thawed cooked shrimp. Heat only until shrimp is hot.
- Top with cheese and serve with green salad.
- Note: great for Phase 2 and 3 of South Beach.

Made it with 1 Tbsp of oil and it came out nicely. It also cuts out 120 Cal and 13.5g fat.

This was excellent! I added red onion, omitted the mushrooms & added alfredo sauce to the whole wheat noodles...YUMMY!
