Mexican Style Quinoa and Black Beans
A yummy, healthy main dish with black beans and quinoa.
Ingredients
Directions
- Rinse raw quinoa in cold water. Use a coffee filter so the seeds do not slip through a sieve.
- Put a cup rinsed quinoa and 1 and 1/2 cups water in pot. Bring to a boil and lower heat. Cover and cook on low for 15 minutes.
- Chop all vegetables and place in glass bowl.
- Add olive oil and canned tomatoes.
- Blend quinoa with the mixture and add cumin.
- Squeeze lime into mixture. Garnish with cilantro.
- Let chill until mixture has "set" (about 10-15 minutes).
- Eat and enjoy!

This was really amazing, i totally loved this dish and it was sooo so good. My kids loved it too, its safe to say we didnt have any leftovers ;)

I made this,but I used amlbur's advice and sauteed the veggies. I added them to warm black beans, then mixed that in the quinoa. stirred in the cumin, tomatoes and cilantro and ate it warm. It was delicious.

I liked this very much. Like many of the others, I tried my own variations. Instead of the tomatoes I used Ortega Taco Sauce to try to give it a little spice. I also used vegetable stock to cook the quinoa and sauteed the veggies in olive oil separately, then stirred everything together. I will definitely make this again.

Tried this last night. It was a big hit - though I want to try it next time with some of the changes suggested in the comments to spice it up even more.

Me gusto :D I made it but instead of water I used reduced sodium chicken broth and insted of red onion I used white and instead of green bell peper I used red . I also added sliced jalapenos !yummmmm ... I think next time I make it I won't add the olive oil. I don't see the point of it but we wil see . OH and EXTRA LIME :)

Really good. I added a chopped red chili pepper and a little salt. I decided I wanted it warm - so I nuked my portion before eating and then added more lime. Delicious. An avocado would make it even better.

This is DELICIOUS! I do think it will be even better if I go with sur365's adjustments tho. First time trying quinoa & I'm so glad I found this great recipe to try it in.

This was really good. Made a few adjustments though. Used veggie broth to cook the quinoa and replaced the green pepper w/fresh jalapenos.
