Foil packet grilled and diced potatoes.
Ingredients
Directions
- Cut up potatoes into small chunks.
- Cut up onions.
- Put 1 tablespoon of olive oil on aluminum foil.
- Place potatoes and onions on foil.
- Add seasonings and remaining tablespoon of olive oil.
- Wrap foil so that it is sealed and no liquid leaks out.
- Place foil packet on grill (medium heat) and grill for about 30 minutes.
- Note: For a faster cook time, you can partially pre-cook potatoes and onions in a microwave (without foil). This will greatly reduce cooking time.

Love these. I cooked them in the oven for about an hour and a half. I used them later in the week to mix in with some green beans to help get my potato fix. Make these!!! I used lots of different herbs. Highly reccomend this recipe.

We are glad that you can think of better ways to use your carbs but the review is for this recipe, not to compare it to what you would serve instead. Thanks for this recipe, Cole. I added some sprigs of rosemary and have halved the olive oil and used some cooking spray on the potatoes and the foil too. Excellent!

No. Everything I've read about the Sonoma iet makes potatoes a forbidden food.... And this says Wave 1. Do you all know something I don't?

I made these last night. It took longer in the oven than I anticipated. Perhaps I had the foil closed too tightly. I had to resort to throwing it in the microwave to soften up.

I love making this, when I don't feel like or have no time to start the grill I toss the foil pouch in the oven and cook it there.
